Cinnamon Roll Heaven

It took the better part of the night, but our cinnamon rolls are done! We made the single batch with the recipe from the Paula Deen cooking site. With my low carb high protein diet, I can not sample the wares. However the men in the home approve :) The recipe said it made 12, but if we had made just 12 the things would have been ginormous! Seriously too big for a little guy, or even a big guy like diggity dog to eat one. We wound up with 18 total. Here it is!

 First attempt at drizzling topping.. I didnt find it to be thick enough with 4 cups of powdered sugar, 1 cup of milk and 4 ounces of butter... so I added 2 cups of powdered sugar. Worked much better!

ingredients bought and other stuff today

Had court this morning, it went and it was interesting I guess. I will be getting my $200 for my windshield beyond that the justice system in our county is lacking. Seriously.  One would think that if someone had a 1 year probated sentence and got caught committing an offense, that gave them an additional 60 days they would have to serve the entire time, right? Well apparently if you are old, and act crazy, and shake like a fool (she does not have parkinson's I am not making fun of someone who does have a disease or illness) you can continue to commit crimes, threaten to kill people and all you have to do is pay for the property damage. You dont serve more than a few days at a time in jail. At least not in this county.


So Tiger is moving out, she found a place today, her wackaloony momma can have both houses. She's done. This is a good thing though actually, because now every time someone comes to her house, her mom wont be there trying to run them off.

After court I went and logged 13 miles on the cycle at the gym... then headed to walmart for protein foods. More later..... off to eat chinese!

Missing Ingredients

So when I snagged the Paula Deen recipe for snow cream, it said next recipe cinnamon rolls. I drooled. Literally. Had to wipe the puddle of drool of my laptop. I thought I could make them for the family, and my reward would be to just inhale the smell of the yummy ooey gooey bliss.

It wasnt meant to be though.... I have no yeast. How did this happen? Oh yeah, the low carb diet. I don't make bread anymore. *sigh* I was really looking forward to the smell.

Ingredients

Dough Mixture:

• 4 eggs
• 6 ounces sugar
• 1 teaspoon fine salt
• 2 cups milk, lukewarm
• 4 ounces margarine
• 8 cups all-purpose flour, divided
• 2 tablespoons yeast

Filling:

• 4 ounces margarine
• 2 cups brown sugar
• 3 tablespoons ground cinnamon
• 1 cup pecans, chopped

Icing:

• 4 cups powdered sugar
• 4 ounces margarine
• 1 cup milk
• 1 tablespoon almond extract

Directions

In a large mixing bowl beat the eggs, sugar, and salt for the dough mixture. Combine the warm mile and margarine and add to the egg mixture. Slowly add 4 cups flour and beat well. Add the yeast and mix thoroughly. Add the remaining 4 cups flour and mix on medium speed for 7 minutes. Place the dough in an oiled bowl and cover with plastic wrap. Let the dough rise to double its size, about 1 hour.
Roll the dough into a 1 1/2 by 2-foot rectangle.

For the filling:

Spread 4 ounces of margarine over the dough and sprinkle entire surface with brown sugar, cinnamon, and chopped pecans. Roll the dough into a cylinder shape starting with the bottom edge, and then cut into 12 slices. Place the slices onto an oiled pan and bake at 350 degrees F for 15 minutes. Cool and cover with icing.

For the icing:

Stir all ingredients until thoroughly combined.

Snow Cream

Remember that from when you were a kid? Snow Cream! So those of us who got snow, what a perfect thing to share with your kids, a flash back from your own childhood. I somewhat recalled the ingredients but wasnt positive. With the help of Paula Deen we got it down ;)

Ingredients

• 8 cups snow, or shaved ice
• 1 (14-ounce) can sweetened condensed milk
• 1 teaspoon vanilla extract

Directions

Place snow or shaved ice into a large bowl. Pour condensed milk over and add vanilla. Mix to combine. Serve immediately in bowls.

Feeling a bit domesticated tonight

So I broke out the recipe books....and settled on the Hershey's cookbook. The boys decided double chocolate chip cookies sounded like the right thing to cook tonight. So to the kitchen I went...  pulling out ingredients, mixing and stirring....

My help wandered out of the kitchen... to play wii fit plus. Some help he was!

First batch... they smell heavenly. However they are NOT on my low carb high protein diet *mumbles* smelling is all I can do.

The cookie eater is ready to eat! Taking the plate in to see diggity dog, and share a glass of milk :)

No clue what we will do for entertainment tomorrow. School has already been canceled for a snow day again.

Snow days... and more snow days

At this rate, we will probably have school through July. It started snowing last night around 10pm I guess. I really wasnt paying any attention. I watched the "Polar" report on WBKO news waiting to see what counties were going to call it another snow day for the kids. 4 counties called it last night. 2am, still 4 counties and ours wasnt one of them. What odd behavior for our school district, usually the weatherman says "snow" and they freak out. For many people snow isnt a big deal, they live in places that get lots of snow, they get snow every year. Here in the south, its hit and miss... though usually more miss than hit! This year has been a bit different. We have had more snow this year than I can remember in the last 8 years of living in this area. 

So anyhow, I went to sleep, 4am Im up because diggity dog is headed to work, and no matter how quiet he attempts to be, he is like a bull in  a china shop. There is nothing quiet about it. SoI turn on the laptop and check the polar report again. A few more counties added, making that every county around us with the exception of 1. I check the reports for the weather near the college... its as bad as our weather reports 4-6 inches expected... but school is not canceled yet.

By 530 am both the county school district and the college have made announcements. School is out for lil dude... and college classes are in session after 12. Back to bed! Ha, not hardly. I tried, I truly did, but I couldnt fall asleep. So I did some paperwork, some homework and I watched the shows I had DVR'd. Not much later I get a text from the college, no school at all today. Gee thanks for the texts last night! Then I get a call from diggity  dog. Appear no one else is coming in, the base is shut down. He turns around and comes home. 

So today was a Harry Potter Marathon day, we started with year 1 and watched them all they way to the Half Blood Prince. I love me some Harry Potter.

Though I must say I loved the books more so than the movies. I just finished reading HP and the Deathly Hallows, I think it is probably my favorite... though Im not fond of being left hanging at the end. We need a follow up... how are the little Potter kids? What about the Weasley little one's? So much left unspoken at the end.

Okay so we played outside as well, but the snow was crappy. Not the good kind that you can make good snowballs with. Or the kind you can make an awesome snowman out of. Just wet unpackable snow.

Crime victims get served subpoenas too...

Who knew? Certainly not me! Around 530 tonight I heard a car in the driveway. Honestly figured it was Sam.... tired of being at home and coming to visit. So I peeked out the french doors to see strange headlights. Most certainly wasnt a minivan.

Went to the door to find a deputy from the sheriffs department, looking for me. My first instinct was to lie, she's not home.... Nah just kidding but my heart was certainly thumping! I said Im her. He said he was there to serve a warrant  oops wrong word, subpoena. I inquired what it was for... and he said Nada Y*****. Ahh it all falls into place. The windshield. The psycho mom of my friend. Recall that blog post now? Yeah that one. Before I knew it I was saying victims get served subpoenas? Yep apparently they do. So Court on Friday. Yeah Friday. When Im supposed to make up my lab and clinical hours at school. The hours I missed today because lil dude is sick.

My professor is going to think Im the loopiest person in the class. If its not one thing, it most certainly always, is another!
